Like the North Piers that guide ships safely into harbor along Lake Michigan’s coast, this blend brings balance and direction to a bold journey of flavor. Crafted from dry-processed Ethiopian and Yemeni beans, which are grown on opposite sides of the Red Sea, this coffee is as complex and vibrant as the waters that inspired its name. It offers fruity characteristics of ripe red fruits with bright acidity and earthy undertones, delivering a cup that’s both adventurous and grounded. We take this blend to just before the second crack allowing the fruity tang to reach its full potential but steering away from an oily result. A steady brew for those drawn to depth, discovery, and the open horizon.

From the first time I roasted coffee at home, I was captivated by the wild, untamed beauty of beans from the mountains of Tanzania. Grown in rich volcanic soil on small, intercropped farms nestled between the Kilimanjaro and Arusha regions, these rare peaberries have a spirit all their own. Bright, sweet, and undeniably vibrant.
This fully washed coffee is produced using traditional methods—hand-pulped, fermented in buckets, and dried on raised beds—resulting in a cup that reflects both the rugged landscape and the care of the farmers behind it. The aroma opens with warm notes of brown sugar and honey, leading into a juicy, smooth body with vibrant bursts of citrus, orange, blueberry, and black tea. The finish is crisp, clean, and sweet, with a tangy, wine-like acidity that lingers like a memory.
Roasted lightly to preserve its complexity, this is the coffee that started it all for me.
Bold. Bright. Unforgettable.

Inspired by one of America’s earliest ventures into powered flight, this coffee honors Augustus Herring’s bold leap from the sandy shores of Silver Beach in St. Joseph, Michigan, on October 11, 1899. Much like Herring’s pioneering spirit, this honey-processed Tarrazú coffee is the product of vision, precision, and a passion for pushing boundaries. Sourced from…
Inspired by one of America’s earliest ventures into powered flight, this coffee honors Augustus Herring’s bold leap from the sandy shores of Silver Beach in St. Joseph, Michigan, on October 11, 1899. Much like Herring’s pioneering spirit, this honey-processed Tarrazú coffee is the product of vision, precision, and a passion for pushing boundaries.
Sourced from small farms in Costa Rica’s Tarrazú region—where the average farm spans just three hectares—this coffee is meticulously selected for ripeness and processed with care. The honey method preserves the fruit’s natural sugars during drying, resulting in an exceptionally smooth and complex cup. This craft process starts with the strict selection of perfectly ripe cherries, once the coffee is depulped the mucilage is left on allowing the natural sugars to enhance the coffee's flavors. The coffee is then dried on African beds or patios, allowing the coffee to dry in a slow and even way. With layered notes of chocolate, nectarine and guava, a silky body, and a clean finish, it’s a tribute to those who dare to take flight.

This is a roast built on precision and craft, honoring the Ojibwe, Ottawa, and Potawatomi, explorers like Samuel de Champlain, and all who have braved the waters of Lake Michigan by canoe, sailboat, schooner, steamship, passenger ferry, and freighter. Mariner’s Blend features a washed-processed peaberry which is an uncommon coffee bean that develops as a single, rounded seed rather than the typical pair. Only about 10% of coffee beans form this way, resulting in a denser bean with cleaner, brighter flavor characteristics. Through the washed process, the fruit is fully removed before fermentation and drying, allowing the inherent clarity and brightness of the coffee to shine. The result is a remarkably clean, medium-bodied cup with rich notes of dark chocolate and a smooth finish. This blend is full of character, with balanced acidity and a bold, refined taste. Whether brewed as espresso or a strong morning cup, Mariner’s Blend is a nod to those who rise early, steer steady, and embrace the journey ahead.
Grown and harvested in Huila, Colombia, this bean’s origin lies near the Nevado de Huila volcano––the soil is rich with minerals, and the microclimate is perfect for perfect, complex coffee. The producers use manual, hand-cranked machines to de-pulp the bean’s cherry, and raised beds dry the coffee evenly. The beans are expertly handled at every…

Peaberries are a natural mutation where only one small, round bean forms inside the coffee cherry instead of the usual two. This denser bean roasts more evenly and delivers a concentrated flavor experience. We roast this bean just before the second crack which allows the full flavor of the peaberry to be released without the oily finish of a dark roast.
In the cup, expect warm almond tones up front, followed by a sweet, vanilla soymilk finish. A gentle note of sweet orange cream lingers, making each sip smooth, bright, and satisfying.

The "honey process" gets its name from the sticky, sugary coating—called mucilage—that clings to the beans during drying. Black Honey, the most intense version of this method, leaves the most mucilage on the bean and requires extended drying on raised beds. It strikes a beautiful balance between washed and natural processing: fruity, but not overpowering, with rounded acidity, intense sweetness, and a lush, complex mouthfeel.
