Just as conservation efforts help preserve the delicate balance of its habitat, this coffee honors thoughtful cultivation and craftsmanship.
The “honey process” gets its name from the sticky, sugary coating—called mucilage—that clings to the beans during drying. Black Honey, the most intense version of this method, leaves the most mucilage on the bean and requires extended drying on raised beds. It strikes a beautiful balance between washed and natural processing: fruity, but not overpowering, with rounded acidity, intense sweetness, and a lush, complex mouthfeel.
