Formally known as our 18 Rabbit roast. This coffee honors the endangered Piping Plover, a small and resilient shorebird that nests along the protected dunes of Lake Michigan and stands as a symbol of quiet strength. Just as conservation efforts help preserve the delicate balance of its habitat, this coffee honors thoughtful cultivation and craftsmanship.

The “honey process” gets its name from the sticky, sugary coating—called mucilage—that clings to the beans during drying. Black Honey, the most intense version of this method, leaves the most mucilage on the bean and requires extended drying on raised beds. It strikes a beautiful balance between washed and natural processing: fruity, but not overpowering, with rounded acidity, intense sweetness, and a lush, complex mouthfeel.

Grown by a Cup of Excellence-winning Honduran farmer committed to paying over 300% above Fair Trade wages, this organic lot is a model of sustainable excellence. In the cup, expect rich chocolate notes, a hint of green apple acidity, and a heavy, syrupy body.
